Ingredients
- 1 lb boneless, skinless chicken breasts
- 1/4 cup honey
- 3 tablespoons fresh lime juice (about 2 limes)
- 2 cloves garlic, minced
- 1 teaspoon soy sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup long-grain white rice
- 2 cups water
- 1 tablespoon olive oil
- 1/2 cup fresh cilantro, chopped
- 1 avocado, sliced
- Lime wedges for serving
Instructions
- In a bowl, whisk together honey, lime juice, minced garlic, soy sauce, salt, and pepper. Place chicken breasts in a shallow dish and pour marinade over them. Cover and refrigerate for at least 30 minutes.
- While chicken marinates, rinse rice under cold water. In a saucepan, combine rice and water, bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until water is absorbed. Remove from heat and let stand for 5 minutes, then fluff with a fork.
- Heat olive oil in a large skillet over medium-high heat. Remove chicken from marinade, reserving the marinade. Cook chicken for 6-7 minutes per side, or until golden and cooked through (internal temperature reaches 165°F). Remove chicken from skillet and let rest for 5 minutes.
- In the same skillet, pour the reserved marinade and bring to a simmer. Cook for 2-3 minutes until slightly thickened, creating a glaze. Slice the rested chicken into strips.
- Mix the chopped cilantro into the cooked rice. To assemble, place a scoop of cilantro-lime rice on each plate, top with sliced chicken, then avocado slices. Drizzle with the honey lime glaze and serve with lime wedges.
Notes
You can customize the seasonings to taste. For a spicier kick, add a pinch of red pepper flakes to the marinade. If you prefer a fresh lime flavor, add a bit of lime zest to the rice.
