Description
A comforting and hearty soup featuring tender meatballs, fresh vegetables, and acini di pepe pasta, all simmered in a savory chicken broth.
Ingredients
- 1 lb ground beef
- 1/2 lb ground pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tbsp chopped fresh parsley
- 8 cups chicken broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 small onion, diced
- 1 cup acini di pepe pasta
- 4 cups fresh spinach
- Salt and pepper to taste
Instructions
- In a bowl, combine ground beef, ground pork, breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper. Form into small meatballs (about 1 inch in diameter).
- In a large pot, bring chicken broth to a simmer. Add carrots, celery, and onion, and cook for 10 minutes until vegetables are tender.
- Gently add meatballs to the simmering broth and cook for 10 minutes, until cooked through.
- Stir in acini di pepe pasta and cook for an additional 8-10 minutes until pasta is al dente.
- Add fresh spinach and cook for 2-3 minutes until wilted. Season with salt and pepper as needed.
