A classic Italian soup with savory mini meatballs, tender greens, and delicate pasta in a flavorful broth.
Ingredients
- 1 lb ground pork
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 large egg
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 8 cups chicken broth
- 2 cups water
- 1 cup small pasta (such as acini di pepe or orzo)
- 4 cups fresh spinach, chopped
- 1/2 cup grated Parmesan cheese for serving
Instructions
- In a large bowl, combine ground pork, ground beef, breadcrumbs, 1/4 cup Parmesan cheese, garlic, egg, salt, pepper, and oregano. Mix gently and form into small 1-inch meatballs.
- In a large pot, bring chicken broth and water to a boil. Carefully drop in the meatballs and cook for about 10 minutes, until they float and are cooked through.
- Add pasta to the pot and cook according to package directions until al dente, about 8-10 minutes.
- Stir in the chopped spinach and cook for 2 minutes until wilted.
- Ladle soup into bowls and top with remaining Parmesan cheese. Serve hot.
Notes
For a lighter version, use ground turkey and low-sodium broth. You can also add a squeeze of lemon juice before serving for extra brightness.
