Description

A classic Italian soup with savory mini meatballs, tender greens, and delicate pasta in a flavorful broth.


Ingredients

  • 1 lb ground pork
  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 8 cups chicken broth
  • 2 cups water
  • 1 cup small pasta (such as acini di pepe or orzo)
  • 4 cups fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese for serving


Instructions

  1. In a large bowl, combine ground pork, ground beef, breadcrumbs, 1/4 cup Parmesan cheese, garlic, egg, salt, pepper, and oregano. Mix gently and form into small 1-inch meatballs.
  2. In a large pot, bring chicken broth and water to a boil. Carefully drop in the meatballs and cook for about 10 minutes, until they float and are cooked through.
  3. Add pasta to the pot and cook according to package directions until al dente, about 8-10 minutes.
  4. Stir in the chopped spinach and cook for 2 minutes until wilted.
  5. Ladle soup into bowls and top with remaining Parmesan cheese. Serve hot.

Notes

For a lighter version, use ground turkey and low-sodium broth. You can also add a squeeze of lemon juice before serving for extra brightness.
