Description

A classic Italian soup with tiny meatballs, tender greens, and acini di pepe pasta in a savory broth. Perfect for a cozy meal.


Ingredients

  • 1 lb ground pork
  • 1/2 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 8 cups chicken broth
  • 1 cup acini di pepe pasta
  • 4 cups fresh spinach, roughly chopped
  • 1/2 cup grated Parmesan cheese (for serving)


Instructions

  1. In a large bowl, combine ground pork, ground beef, breadcrumbs, 1/4 cup Parmesan, egg, minced garlic, salt, and pepper. Mix gently and form into small 1-inch meatballs.
  2. In a large pot, heat olive oil over medium heat. Add meatballs in batches and brown on all sides. Remove and set aside.
  3. Pour chicken broth into the pot and bring to a boil. Add acini di pepe pasta and cook until al dente, about 8 minutes.
  4. Return meatballs to the pot. Stir in spinach and cook until wilted, about 2 minutes.
  5. Ladle soup into bowls and top with remaining Parmesan cheese. Serve hot.

Notes

You can customize the seasonings to taste. For a richer broth, add a splash of white wine before adding the broth. Use a combination of greens like kale or escarole if desired.
