Ingredients
- 1 lb ground pork
- 1/2 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 8 cups chicken broth
- 1 cup acini di pepe pasta
- 4 cups fresh spinach, roughly chopped
- 1/2 cup grated Parmesan cheese (for serving)
Instructions
- In a large bowl, combine ground pork, ground beef, breadcrumbs, 1/4 cup Parmesan, egg, minced garlic, salt, and pepper. Mix gently and form into small 1-inch meatballs.
- In a large pot, heat olive oil over medium heat. Add meatballs in batches and brown on all sides. Remove and set aside.
- Pour chicken broth into the pot and bring to a boil. Add acini di pepe pasta and cook until al dente, about 8 minutes.
- Return meatballs to the pot. Stir in spinach and cook until wilted, about 2 minutes.
- Ladle soup into bowls and top with remaining Parmesan cheese. Serve hot.
Notes
You can customize the seasonings to taste. For a richer broth, add a splash of white wine before adding the broth. Use a combination of greens like kale or escarole if desired.
