Description

A hearty and comforting Italian soup with tiny meatballs, tender greens, and acini di pepe pasta in a flavorful broth.


Ingredients

  • 1 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 8 cups chicken broth
  • 1 cup acini di pepe pasta
  • 4 cups fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese (for serving)
  • Fresh parsley for garnish


Instructions

  1. In a large bowl, combine ground pork, breadcrumbs, 1/4 cup Parmesan cheese, egg, minced garlic, salt, and pepper. Mix until well combined.
  2. Roll the mixture into small, 1-inch meatballs.
  3. In a large pot, heat olive oil over medium heat. Add the meatballs and brown on all sides, about 5 minutes.
  4. Pour in the chicken broth and bring to a boil. Reduce heat to a simmer.
  5. Add the acini di pepe pasta and cook until tender, about 8 minutes.
  6. Stir in the chopped spinach and cook until wilted, about 2 minutes.
  7. Ladle the soup into bowls and top with additional Parmesan cheese and fresh parsley.

Notes

You can customize the seasonings to taste. Add a pinch of red pepper flakes for a little heat.
