Description
A festive and elegant salmon dish featuring a sweet-tart cranberry glaze, perfect for holiday gatherings. The salmon is roasted to perfection and topped with a vibrant cranberry sauce that adds a burst of color and flavor.
Ingredients
- 4 (6-ounce) salmon fillets, skin on
- 1 cup fresh or frozen cranberries
- 1/4 cup orange juice
- 1/4 cup honey
- 2 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- Salt and pepper, to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a small saucepan, combine cranberries, orange juice, honey, balsamic vinegar, Dijon mustard, garlic, and thyme. Bring to a simmer over medium heat and cook for 8-10 minutes, until cranberries burst and sauce thickens slightly. Set aside.
- Pat salmon fillets dry and season both sides with salt and pepper. Place on the prepared baking sheet, skin side down. Brush each fillet with olive oil and spoon about 2 tablespoons of the cranberry glaze over each fillet, reserving the rest for serving.
- Bake for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork. For a caramelized top, broil for the last 2 minutes.
- Serve salmon with additional cranberry glaze spooned over the top.
Notes
You can customize the seasonings to taste. For a spicier kick, add a pinch of red pepper flakes to the glaze. If you prefer a sweeter glaze, add more honey.
