Description

A moist and tropical cake featuring white chocolate and pineapple, topped with a creamy frosting for a heavenly dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup crushed pineapple, drained
  • 1/2 cup white chocolate chips, melted
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup buttermilk
  • For frosting: 8 oz cream cheese, softened, 1/4 cup powdered sugar, 1/2 cup heavy cream


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, cream together butter and sugar until fluffy. Beat in eggs one at a time, then stir in vanilla and melted white chocolate.
  3. In another bowl, whisk flour, baking powder, baking soda, and salt. Alternately add dry ingredients and buttermilk to the butter mixture, mixing until just combined. Fold in crushed pineapple.
  4. Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean. Let cool completely.
  5. For frosting, beat cream cheese and powdered sugar until smooth. In a separate bowl, whip heavy cream to stiff peaks, then fold into cream cheese mixture. Spread over cooled cake.
