Description

A tropical twist on classic carrot cake, featuring sweet pineapple chunks and a creamy frosting for a moist, flavorful dessert.


Ingredients

  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon pineapple juice


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, mix flour, sugar, baking soda, cinnamon, and salt. Add eggs, oil, and vanilla, stirring until combined.
  3. Fold in grated carrots and crushed pineapple. Pour batter into prepared pan and bake for 30-35 minutes, until a toothpick inserted comes out clean. Let cool completely.
  4. For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and pineapple juice, mixing until creamy. Spread over cooled cake.
