Description

A hearty and comforting one-pot meal featuring seasoned ground beef, potatoes, and vegetables slow-cooked to perfection in a crockpot.


Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup beef broth
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 2 tbsp olive oil


Instructions

  1. In a skillet, heat olive oil over medium heat and brown the ground beef with onion and bell pepper until beef is cooked through.
  2. Transfer the beef mixture to the crockpot and add diced potatoes, diced tomatoes, beef broth, garlic powder, paprika, salt, and pepper.
  3. Stir all ingredients until well combined, cover, and cook on low for 6-7 hours or on high for 3-4 hours until potatoes are tender.
  4. Serve hot, optionally garnished with fresh parsley or shredded cheese.
