A hearty and comforting one-pot meal featuring seasoned ground beef, potatoes, and vegetables slow-cooked to perfection in a crockpot.
Ingredients
- 1 lb ground beef
- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup beef broth
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and black pepper to taste
- 2 tbsp olive oil
Instructions
- In a skillet, heat olive oil over medium heat and brown the ground beef with onion and bell pepper until beef is cooked through.
- Transfer the beef mixture to the crockpot and add diced potatoes, diced tomatoes, beef broth, garlic powder, paprika, salt, and pepper.
- Stir all ingredients until well combined, cover, and cook on low for 6-7 hours or on high for 3-4 hours until potatoes are tender.
- Serve hot, optionally garnished with fresh parsley or shredded cheese.
