Ingredients
- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 1/2 cup chicken broth
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until fragrant, about 2 minutes.
- Add ground turkey to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
- Stir in sweet potatoes, bell pepper, paprika, cumin, salt, and pepper. Pour in chicken broth and bring to a simmer.
- Cover and cook for 15-20 minutes, stirring occasionally, until sweet potatoes are tender.
- Uncover and cook for an additional 5 minutes to reduce any excess liquid. Garnish with fresh parsley before serving.
