Description
A hearty, low-carb casserole with savory ground beef and tender zucchini, baked in a rich tomato sauce and topped with melted cheese. Perfect for a satisfying weeknight dinner.
Ingredients
- 1 lb ground beef
- 4 medium zucchini, sliced into rounds
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet over medium heat, heat olive oil and cook onion until soft, about 3 minutes. Add garlic and cook for another minute.
- Add ground beef to the skillet, breaking it apart. Cook until browned, about 5 minutes. Drain excess fat if needed.
- Stir in diced tomatoes, oregano, salt, and pepper. Let simmer for 5 minutes.
- In a 9×13-inch baking dish, layer half of the zucchini slices, then half of the meat mixture. Repeat with remaining zucchini and meat mixture.
- Top with shredded mozzarella and Parmesan cheese.
- Bake uncovered for 25–30 minutes, until cheese is bubbly and golden. Let rest 5 minutes before serving.
Notes
You can customize the seasonings to taste. For extra flavor, add a pinch of red pepper flakes.
