Description

A hearty, low-carb casserole featuring seasoned ground beef, fresh zucchini, and melted cheese, baked to perfection for a comforting and healthy meal.


Ingredients

  • 1 lb ground beef (85% lean)
  • 2 medium zucchinis, sliced into rounds
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup marinara sauce (sugar-free)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and black pepper to taste
  • 2 tbsp olive oil


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until softened, about 3-4 minutes.
  3. Add ground beef to the skillet, breaking it up with a spoon. Cook until browned and no longer pink. Drain excess fat if needed.
  4. Stir in marinara sauce, dried oregano, dried basil, salt, and pepper. Simmer for 5 minutes, then remove from heat.
  5. Arrange zucchini slices in a single layer in the prepared baking dish. Spread the ground beef mixture evenly over the zucchini.
  6. Sprinkle mozzarella and Parmesan cheeses on top of the beef mixture.
  7. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is bubbly and golden.
  8. Let cool for 5 minutes before serving.
