Description

A hearty, low-carb casserole featuring seasoned ground beef, fresh zucchini, and melted cheese, baked to perfection for a comforting and healthy meal.


Ingredients

  • 1 lb ground beef (85% lean)
  • 2 medium zucchinis, sliced into rounds
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup marinara sauce (sugar-free)
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • 1 tbsp olive oil


Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish with olive oil.
  2. In a skillet over medium heat, cook ground beef, onion, and garlic until beef is browned. Drain excess fat.
  3. Stir in marinara sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  4. Layer zucchini rounds in the baking dish, top with beef mixture, and sprinkle cheese evenly on top.
  5. Bake for 25-30 minutes until cheese is bubbly and zucchini is tender. Let cool slightly before serving.
