Description

A hearty, low-carb casserole featuring seasoned ground beef, fresh zucchini, and melted cheese, perfect for a comforting and healthy meal.


Ingredients

  • 1 lb ground beef
  • 2 medium zucchinis, sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup marinara sauce (sugar-free)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
  3. Add ground beef, cook until browned. Drain excess fat.
  4. Stir in marinara sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  5. Layer sliced zucchini in a baking dish, top with the beef mixture, and sprinkle cheese evenly.
  6. Bake for 25-30 minutes until zucchini is tender and cheese is bubbly.
