A hearty and cheesy low-carb casserole featuring seasoned ground beef, tender zucchini, and a rich tomato sauce, baked to perfection. Perfect for a comforting dinner without the carbs.
Ingredients
- 1 lb ground beef
- 2 medium zucchinis, sliced into 1/4-inch rounds
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can diced tomatoes, drained
- 1 (8 oz) can tomato sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 2 tablespoons olive oil
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray.
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if needed.
- Add chopped onion and minced garlic to the skillet. Cook for 2-3 minutes until onion is translucent.
- Stir in diced tomatoes, tomato sauce, oregano, basil, salt, and black pepper. Simmer for 5 minutes, then remove from heat.
- Spread half of the meat sauce evenly over the bottom of the prepared baking dish.
- Layer the zucchini slices over the sauce, slightly overlapping.
- Top with the remaining meat sauce, spreading it to cover the zucchini.
- Sprinkle both mozzarella and cheddar cheeses over the top.
- Bake in the preheated oven for 25-30 minutes, until bubbly and cheese is golden brown.
- Let rest for 5 minutes before serving. Enjoy hot.
Notes
You can customize the seasonings to taste. For extra flavor, add red pepper flakes or Italian seasoning. This dish is great with a side salad or steamed vegetables.
