Description

A hearty and cheesy low-carb casserole featuring seasoned ground beef, tender zucchini, and a rich tomato sauce, baked to perfection. Perfect for a comforting dinner without the carbs.


Ingredients

  • 1 lb ground beef
  • 2 medium zucchinis, sliced into 1/4-inch rounds
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can diced tomatoes, drained
  • 1 (8 oz) can tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons olive oil


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if needed.
  3. Add chopped onion and minced garlic to the skillet. Cook for 2-3 minutes until onion is translucent.
  4. Stir in diced tomatoes, tomato sauce, oregano, basil, salt, and black pepper. Simmer for 5 minutes, then remove from heat.
  5. Spread half of the meat sauce evenly over the bottom of the prepared baking dish.
  6. Layer the zucchini slices over the sauce, slightly overlapping.
  7. Top with the remaining meat sauce, spreading it to cover the zucchini.
  8. Sprinkle both mozzarella and cheddar cheeses over the top.
  9. Bake in the preheated oven for 25-30 minutes, until bubbly and cheese is golden brown.
  10. Let rest for 5 minutes before serving. Enjoy hot.

Notes

You can customize the seasonings to taste. For extra flavor, add red pepper flakes or Italian seasoning. This dish is great with a side salad or steamed vegetables.
