A hearty, low-carb casserole featuring seasoned ground beef and tender zucchini, baked with a cheesy topping. Perfect for a satisfying meal without the carbs.
Ingredients
- 1 lb ground beef
- 4 medium zucchinis, sliced into half-moons
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add onion and garlic, cook until softened, about 3 minutes.
- Add ground beef, breaking it up, and cook until browned. Drain excess fat.
- Stir in diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- In a greased 9×13-inch baking dish, layer half of the zucchini slices. Top with half of the beef mixture. Repeat layers.
- Sprinkle mozzarella and Parmesan cheeses evenly over the top.
- Bake for 25-30 minutes, until bubbly and cheese is golden.
- Let rest for 5 minutes before serving.
Notes
You can customize the seasonings to taste. For extra flavor, add red pepper flakes or fresh herbs like basil.
