Description

A hearty, low-carb casserole featuring seasoned ground beef and tender zucchini, baked with a cheesy topping. Perfect for a satisfying meal without the carbs.


Ingredients

  • 1 lb ground beef
  • 4 medium zucchinis, sliced into half-moons
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, cook until softened, about 3 minutes.
  3. Add ground beef, breaking it up, and cook until browned. Drain excess fat.
  4. Stir in diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  5. In a greased 9×13-inch baking dish, layer half of the zucchini slices. Top with half of the beef mixture. Repeat layers.
  6. Sprinkle mozzarella and Parmesan cheeses evenly over the top.
  7. Bake for 25-30 minutes, until bubbly and cheese is golden.
  8. Let rest for 5 minutes before serving.

Notes

You can customize the seasonings to taste. For extra flavor, add red pepper flakes or fresh herbs like basil.
