A hearty and satisfying low-carb casserole featuring seasoned ground beef, tender zucchini, and melted cheese. Perfect for a wholesome dinner that’s light on carbs but big on flavor.
Ingredients
- 1 lb ground beef
- 2 medium zucchinis, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
- Add ground beef to skillet and cook until browned. Drain excess fat.
- Stir in diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Layer half of the zucchini slices in the bottom of a greased 9×13-inch baking dish.
- Spread the beef mixture over the zucchini.
- Top with remaining zucchini slices.
- Sprinkle mozzarella and Parmesan cheeses evenly over the top.
- Bake for 25-30 minutes, until cheese is bubbly and golden.
- Let rest for 5 minutes before serving.
Notes
You can customize the seasonings to taste. For extra heat, add red pepper flakes. This dish pairs well with a side salad.
