Description

A hearty, low-carb casserole with seasoned ground beef and tender zucchini, baked with cheese for a satisfying meal.


Ingredients

  • 1 lb ground beef
  • 3 medium zucchini, sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup tomato sauce (no sugar added)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 3 minutes. Add garlic and cook 1 minute more.
  3. Add ground beef to skillet, breaking it apart. Cook until browned, about 5-7 minutes. Drain excess fat.
  4. Stir in tomato sauce, Italian seasoning, salt, and pepper. Simmer for 2 minutes, then remove from heat.
  5. Layer half the zucchini slices in the prepared baking dish. Top with half the beef mixture, then half the mozzarella cheese. Repeat layers with remaining zucchini, beef, and cheese.
  6. Bake uncovered for 25-30 minutes until bubbly and zucchini is tender. Let rest 5 minutes before serving.
