Description

A hearty, low-carb casserole made with seasoned ground beef, tender zucchini, and melted cheese. Perfect for a satisfying dinner without the carbs.


Ingredients

  • 1 lb ground beef
  • 2 medium zucchini, sliced into rounds
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup crushed tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until softened, about 3 minutes.
  3. Add ground beef to the skillet. Cook until browned, breaking it apart with a spoon. Drain excess fat.
  4. Stir in crushed tomatoes, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  5. Layer half of the zucchini slices in the bottom of a 9×13-inch baking dish. Spread half of the meat mixture over the zucchini. Repeat layers with remaining zucchini and meat mixture.
  6. Sprinkle mozzarella and Parmesan cheeses evenly on top.
  7. Bake uncovered for 25-30 minutes, until bubbly and cheese is golden. Let rest for 5 minutes before serving.

Notes

You can customize the seasonings to taste. For extra protein, add a layer of spinach between the zucchini.
