Description

A quick and flavorful one-pan meal featuring seasoned ground beef, fresh spinach, and tangy feta cheese. Perfect for a weeknight dinner that’s both satisfying and nutritious.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 5 oz fresh baby spinach
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon lemon juice
  • 1/4 cup chopped fresh parsley (optional)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and no longer pink, about 5-7 minutes.
  2. Add the chopped onion and cook for 3-4 minutes until softened. Stir in the garlic, oregano, cumin, smoked paprika, salt, and pepper. Cook for 1 minute until fragrant.
  3. Add the spinach in batches, stirring until it wilts completely, about 2-3 minutes. Remove from heat.
  4. Stir in the lemon juice and half of the crumbled feta. Taste and adjust seasoning if needed.
  5. Serve hot, topped with the remaining feta and a sprinkle of fresh parsley if desired.
