A quick and easy one-pan meal featuring seasoned ground beef, fresh spinach, and tangy feta cheese. Perfect for busy weeknights.
Ingredients
- 1 tablespoon olive oil
- 1 pound lean ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 5 ounces fresh baby spinach
- 1/2 cup crumbled feta cheese
- 1 tablespoon lemon juice (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned (about 5-6 minutes). Drain excess fat if needed.
- Add diced onion and cook for 2-3 minutes until softened. Stir in garlic, oregano, salt, and pepper, and cook for 1 minute until fragrant.
- Add fresh spinach in batches, stirring until wilted (about 2-3 minutes total).
- Remove skillet from heat. Sprinkle crumbled feta cheese over the top and drizzle with lemon juice if desired. Serve immediately.
Notes
You can customize the seasonings to taste. For extra heat, add a pinch of red pepper flakes. Serve with rice, quinoa, or crusty bread.
