A quick and hearty one-pan meal featuring seasoned ground beef, fresh spinach, and tangy feta cheese, perfect for a busy weeknight dinner.
Ingredients
- 1 lb ground beef (80/20 blend)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups fresh spinach
- 1 cup crumbled feta cheese
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp paprika
- Salt and black pepper to taste
- 1/4 cup beef broth or water
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the diced onion and cook until softened, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, then stir in the minced garlic, oregano, paprika, salt, and pepper.
- Pour in the beef broth and add the fresh spinach. Stir until the spinach wilts, about 2-3 minutes.
- Remove from heat and sprinkle the crumbled feta cheese over the top. Cover for 1-2 minutes to let the cheese soften slightly before serving.
