Description

Smoky grilled zucchini slices are topped with a vibrant, spicy Asian-inspired sauce made with soy, sesame, chili, and fresh herbs. A perfect quick side dish for summer barbecues or a light main course.


Ingredients

  • 4 medium zucchinis, sliced lengthwise into 1/4-inch thick strips
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon chili garlic sauce (or to taste)
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds
  • 1/4 cup fresh cilantro leaves, chopped


Instructions

  1. Preheat grill to medium-high heat (about 400°F).
  2. Brush zucchini strips with olive oil and season with salt and pepper on both sides.
  3. Grill zucchini for 2-3 minutes per side until tender and grill marks appear. Remove from heat and arrange on a serving platter.
  4. In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, chili garlic sauce, garlic, and ginger.
  5. Drizzle the sauce over the grilled zucchini while still warm.
  6. Garnish with green onions, sesame seeds, and cilantro. Serve immediately.

Notes

You can customize the seasonings to taste. Adjust the chili garlic sauce for more or less heat. This dish is great served warm or at room temperature.
