Description

A fresh and satisfying vegetarian wrap featuring smoky grilled zucchini, protein-rich chickpeas, creamy feta, and a bright herbed yogurt sauce. Perfect for a quick lunch or light dinner.


Ingredients

  • 2 medium zucchini, sliced lengthwise into 1/4-inch thick strips
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 4 large flour tortillas or wraps
  • 1/2 cup crumbled feta cheese
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh mint
  • 1 tablespoon lemon juice
  • 1 small garlic clove, minced
  • 1 cup fresh spinach or mixed greens
  • 1/4 cup thinly sliced red onion


Instructions

  1. Preheat a grill or grill pan over medium-high heat. In a bowl, toss zucchini slices with olive oil, smoked paprika, garlic powder, salt, and pepper. Grill for 2-3 minutes per side until tender and grill marks appear. Remove and set aside.
  2. In a small bowl, combine chickpeas with cumin, chili powder, and a pinch of salt. In the same grill pan (or a skillet), cook chickpeas for 3-4 minutes, stirring occasionally, until lightly charred and warm. Set aside.
  3. Prepare the herbed yogurt: In a bowl, mix Greek yogurt with dill, mint, lemon juice, and minced garlic. Season with salt and pepper to taste.
  4. To assemble each wrap, spread a generous spoonful of herbed yogurt over the center of a tortilla. Layer with grilled zucchini, chickpeas, feta, spinach, and red onion.
  5. Fold the sides of the tortilla inward, then roll tightly from the bottom to form a wrap. Slice in half and serve immediately, or grill the wrapped sandwiches for 1-2 minutes per side for a crisper texture.

Notes

You can customize the seasonings to taste. For a spicier kick, add a pinch of cayenne to the chickpeas. If using a grill, brush the tortillas lightly with oil before grilling for extra crispness.
