Description
A fresh and flavorful vegetarian wrap featuring grilled zucchini, spiced chickpeas, crumbled feta, and a creamy herbed yogurt sauce, all wrapped in a soft tortilla.
Ingredients
- 2 medium zucchinis, sliced lengthwise into 1/4-inch strips
- 1 can (15 oz) chickpeas, rinsed and drained
- 1/2 cup crumbled feta cheese
- 4 large flour tortillas or wraps
- 1 cup plain Greek yogurt
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh mint, chopped
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 1 garlic clove, minced
- 1 tablespoon lemon juice
Instructions
- Preheat a grill or grill pan over medium-high heat. Brush zucchini slices with olive oil and season with salt and pepper. Grill for 2-3 minutes per side until tender and charred. Set aside.
- In a bowl, combine chickpeas, cumin, smoked paprika, and a pinch of salt. Toss to coat. In a separate bowl, mix Greek yogurt, dill, mint, minced garlic, lemon juice, salt, and pepper to make the herbed yogurt sauce.
- Warm the tortillas in a dry skillet or microwave for 20 seconds to make them pliable. Spread a generous layer of herbed yogurt sauce on each tortilla.
- Layer grilled zucchini, spiced chickpeas, and crumbled feta evenly over the sauce. Fold the sides of the tortilla inward and roll tightly to form a wrap.
- Serve immediately, or wrap in foil for easy handling. Optionally, slice in half diagonally before serving.
