Description

A fresh and flavorful wrap featuring grilled zucchini, seasoned chickpeas, tangy feta cheese, and a creamy herbed yogurt sauce, all wrapped in a warm tortilla for a satisfying meal.


Ingredients

  • 2 medium zucchinis, sliced lengthwise into 1/4-inch strips
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1/2 cup crumbled feta cheese
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh mint, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 4 large whole wheat or flour tortillas


Instructions

  1. Preheat a grill or grill pan over medium-high heat. Brush zucchini slices with olive oil and season with salt and pepper. Grill for 3-4 minutes per side until tender and charred. Set aside.
  2. In a bowl, combine chickpeas, smoked paprika, garlic powder, salt, and pepper. Mash lightly with a fork to break some chickpeas while leaving others whole.
  3. In another bowl, mix Greek yogurt, dill, mint, lemon juice, and a pinch of salt to make the herbed yogurt sauce.
  4. Warm tortillas on the grill or in a dry skillet for 30 seconds per side. Spread a layer of herbed yogurt sauce on each tortilla.
  5. Top with grilled zucchini slices, seasoned chickpeas, and crumbled feta. Fold the sides of the tortilla inward and roll tightly to form a wrap.
  6. Serve immediately or wrap in foil for easy handling.
