A refreshing Mediterranean salad bowl featuring juicy grilled chicken, crisp vegetables, and a creamy homemade tzatziki sauce.
Ingredients
- 2 boneless skinless chicken breasts
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 4 cups mixed greens
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives
- 1/2 cup crumbled feta cheese
- 1 cup plain Greek yogurt
- 1/2 cucumber, grated and drained
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1 tablespoon fresh dill, chopped
- Salt to taste
Instructions
- In a bowl, combine olive oil, 2 tablespoons lemon juice, minced garlic, oregano, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
- Preheat grill to medium-high heat. Grill chicken for 6-7 minutes per side until cooked through. Let rest, then slice.
- For the tzatziki: mix Greek yogurt, grated cucumber, 1 tablespoon lemon juice, garlic, dill, and salt. Refrigerate until ready.
- Assemble bowls: place mixed greens, diced cucumber, cherry tomatoes, red onion, olives, and feta. Top with sliced chicken and a generous dollop of tzatziki.
- Serve immediately and enjoy.
