Ingredients
- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil, divided
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt, plus more to taste
- 1/4 teaspoon black pepper
- 1 pound boneless, skinless chicken breasts
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1 tablespoon lime juice
- 1 ripe avocado, diced
- 1/2 cup cherry tomatoes, quartered
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh cilantro, chopped
- 1/2 cup plain Greek yogurt
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh chives, chopped
- 1 teaspoon lemon juice
- 1 garlic clove, minced
- 4 cups mixed greens or spinach
Instructions
- Preheat grill to medium-high heat. Toss sweet potato cubes with 1 tablespoon olive oil, smoked paprika, garlic powder, salt, and pepper. Place on a grill pan or foil and grill for 15-20 minutes, turning occasionally, until tender and slightly charred.
- In a small bowl, mix chili powder, cumin, oregano, and a pinch of salt. Rub the spice mixture onto both sides of the chicken breasts. Grill for 6-7 minutes per side, or until internal temperature reaches 165°F. Let rest for 5 minutes, then slice.
- While chicken grills, prepare the avocado salsa: In a bowl, combine avocado, cherry tomatoes, red onion, cilantro, and lime juice. Season with salt to taste and set aside.
- For the herbed yogurt dip: In a small bowl, stir together Greek yogurt, dill, chives, lemon juice, and minced garlic. Season with a pinch of salt.
- Assemble the bowls: Divide mixed greens among 4 bowls. Top with grilled sweet potatoes and sliced chicken. Add a generous spoonful of avocado salsa and drizzle with herbed yogurt dip. Serve immediately.
Notes
You can customize the seasonings to taste. For extra heat, add a pinch of cayenne to the chicken rub.
