Description

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil, divided
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1 tablespoon lime juice
  • 1 ripe avocado, diced
  • 1/2 cup cherry tomatoes, quartered
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon lemon juice
  • 1 garlic clove, minced
  • 4 cups mixed greens or spinach


Instructions

  1. Preheat grill to medium-high heat. Toss sweet potato cubes with 1 tablespoon olive oil, smoked paprika, garlic powder, salt, and pepper. Place on a grill pan or foil and grill for 15-20 minutes, turning occasionally, until tender and slightly charred.
  2. In a small bowl, mix chili powder, cumin, oregano, and a pinch of salt. Rub the spice mixture onto both sides of the chicken breasts. Grill for 6-7 minutes per side, or until internal temperature reaches 165°F. Let rest for 5 minutes, then slice.
  3. While chicken grills, prepare the avocado salsa: In a bowl, combine avocado, cherry tomatoes, red onion, cilantro, and lime juice. Season with salt to taste and set aside.
  4. For the herbed yogurt dip: In a small bowl, stir together Greek yogurt, dill, chives, lemon juice, and minced garlic. Season with a pinch of salt.
  5. Assemble the bowls: Divide mixed greens among 4 bowls. Top with grilled sweet potatoes and sliced chicken. Add a generous spoonful of avocado salsa and drizzle with herbed yogurt dip. Serve immediately.

Notes

You can customize the seasonings to taste. For extra heat, add a pinch of cayenne to the chicken rub.
