Description

A hearty and flavorful bowl featuring smoky grilled chicken, tender sweet potatoes, creamy avocado salsa, and a refreshing herbed yogurt dip. Perfect for a healthy and satisfying meal.


Ingredients

  • 1 lb boneless skinless chicken breasts
  • 2 large sweet potatoes, cubed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 ripe avocado, diced
  • 1/2 cup cherry tomatoes, quartered
  • 1/4 cup red onion, finely chopped
  • 1 tbsp fresh lime juice
  • 2 tbsp fresh cilantro, chopped
  • 1/2 cup plain Greek yogurt
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh mint, chopped
  • 1 tsp lemon juice
  • 1 clove garlic, minced
  • Mixed greens for serving


Instructions

  1. Preheat grill to medium-high heat. Toss sweet potato cubes with olive oil, smoked paprika, garlic powder, salt, and pepper. Grill potatoes in a grill basket or on foil until tender, about 15-20 minutes, turning occasionally.
  2. Season chicken breasts with salt, pepper, and a pinch of smoked paprika. Grill chicken for 6-8 minutes per side until internal temperature reaches 165°F. Let rest, then slice.
  3. In a bowl, combine diced avocado, cherry tomatoes, red onion, lime juice, cilantro, and a pinch of salt. Toss gently to make the avocado salsa.
  4. In a separate small bowl, mix Greek yogurt, dill, mint, lemon juice, minced garlic, and a pinch of salt. Stir until smooth.
  5. Assemble bowls: place a bed of mixed greens, top with sliced grilled chicken, roasted sweet potatoes, a generous spoonful of avocado salsa, and a drizzle of herbed yogurt dip.

Notes

You can customize the seasonings to taste. For extra heat, add a pinch of cayenne to the chicken.
