Ingredients
- 1 lb boneless skinless chicken breasts
- 2 large sweet potatoes, cubed
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 ripe avocado, diced
- 1/2 cup cherry tomatoes, quartered
- 1/4 cup red onion, finely chopped
- 1 tbsp fresh lime juice
- 2 tbsp fresh cilantro, chopped
- 1/2 cup plain Greek yogurt
- 1 tbsp fresh dill, chopped
- 1 tbsp fresh mint, chopped
- 1 tsp lemon juice
- 1 clove garlic, minced
- Mixed greens for serving
Instructions
- Preheat grill to medium-high heat. Toss sweet potato cubes with olive oil, smoked paprika, garlic powder, salt, and pepper. Grill potatoes in a grill basket or on foil until tender, about 15-20 minutes, turning occasionally.
- Season chicken breasts with salt, pepper, and a pinch of smoked paprika. Grill chicken for 6-8 minutes per side until internal temperature reaches 165°F. Let rest, then slice.
- In a bowl, combine diced avocado, cherry tomatoes, red onion, lime juice, cilantro, and a pinch of salt. Toss gently to make the avocado salsa.
- In a separate small bowl, mix Greek yogurt, dill, mint, lemon juice, minced garlic, and a pinch of salt. Stir until smooth.
- Assemble bowls: place a bed of mixed greens, top with sliced grilled chicken, roasted sweet potatoes, a generous spoonful of avocado salsa, and a drizzle of herbed yogurt dip.
Notes
You can customize the seasonings to taste. For extra heat, add a pinch of cayenne to the chicken.
