Ingredients
- 2 large tomatoes, diced
- 1 cucumber, peeled and diced
- 1 red onion, thinly sliced
- 1 green bell pepper, diced
- 1 cup Kalamata olives, pitted
- 8 oz feta cheese, crumbled
- 1/4 cup extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tsp dried oregano
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- In a large bowl, combine tomatoes, cucumber, red onion, bell pepper, and olives.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
- Gently toss the vegetable mixture with half of the dressing until evenly coated.
- Using a ring mold or small bowl, layer the salad mixture and crumbled feta in alternating layers, pressing lightly to form a tower.
- Carefully remove the mold, drizzle with remaining dressing, and garnish with fresh parsley before serving.
