Description

A refreshing and visually stunning stack of ripe tomatoes, crisp cucumber, red onion, Kalamata olives, and creamy feta cheese, drizzled with a tangy oregano vinaigrette.

Ingredients

  • 4 large ripe tomatoes, sliced 1/2-inch thick
  • 1 large cucumber, sliced 1/4-inch thick
  • 1 small red onion, thinly sliced
  • 1 cup Kalamata olives, pitted
  • 8 ounces feta cheese, cut into 1/4-inch slices
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 clove garlic, minced
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a small bowl, whisk together olive oil, red wine vinegar, oregano, garlic, salt, and pepper to make the vinaigrette.
  2. On each serving plate, place a large tomato slice as the base. Top with a cucumber slice, a few red onion rings, and 2-3 olives.
  3. Add a slice of feta cheese, then repeat layers (tomato, cucumber, onion, olives, feta) until you have a tall stack, finishing with a feta slice on top.
  4. Drizzle the vinaigrette over each tower and garnish with fresh parsley.
  5. Serve immediately.
