Description

A stunning layered salad tower featuring crisp vegetables, creamy feta, and tangy olives, perfect as a centerpiece appetizer or light main course.


Ingredients

  • 2 large ripe tomatoes, sliced
  • 1 large cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 200g block feta cheese, sliced
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Arrange a layer of tomato slices on a serving plate in a circle.
  2. Top with a layer of cucumber slices, then a layer of red onion slices.
  3. Add a layer of feta cheese slices and scatter some Kalamata olives.
  4. Repeat layers until all ingredients are used, creating a tower shape.
  5. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  6. Drizzle the dressing over the salad tower and garnish with fresh parsley.
  7. Serve immediately or refrigerate for up to 1 hour before serving.

Notes

You can customize the seasonings to taste. For added crunch, include sliced bell peppers or croutons between layers.
