Description
Light and refreshing appetizer skewers with creamy feta, crisp cucumber, and briny olives, drizzled with a zesty lemon-oregano dressing.
Ingredients
- 1 large cucumber, cut into 1/2-inch rounds
- 8 oz block feta cheese, cut into 1/2-inch cubes
- 1/2 cup kalamata olives, pitted
- 1/4 cup cherry tomatoes, halved
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- 1/2 tsp dried oregano
- Salt and pepper to taste
- Fresh mint leaves for garnish (optional)

Instructions
- In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper to make the dressing.
- Thread one cucumber round, one feta cube, one olive, and one cherry tomato half onto a wooden skewer. Repeat with remaining ingredients.
- Arrange skewers on a serving platter and drizzle with the prepared dressing.
- Garnish with fresh mint leaves if desired. Serve immediately or chill for up to 1 hour before serving.
Notes
You can customize the seasonings to taste. For a sweeter twist, add a drizzle of honey before serving.
