Description

Light and refreshing appetizer skewers with creamy feta, crisp cucumber, and briny olives, drizzled with a zesty lemon-oregano dressing.


Ingredients

  • 1 large cucumber, cut into 1/2-inch rounds
  • 8 oz block feta cheese, cut into 1/2-inch cubes
  • 1/2 cup kalamata olives, pitted
  • 1/4 cup cherry tomatoes, halved
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • Fresh mint leaves for garnish (optional)
  • Wooden skewers


Instructions

  1. In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper to make the dressing.
  2. Thread one cucumber round, one feta cube, one olive, and one cherry tomato half onto a wooden skewer. Repeat with remaining ingredients.
  3. Arrange skewers on a serving platter and drizzle with the prepared dressing.
  4. Garnish with fresh mint leaves if desired. Serve immediately or chill for up to 1 hour before serving.

Notes

You can customize the seasonings to taste. For a sweeter twist, add a drizzle of honey before serving.
