Description

Marinated chicken souvlaki served over fluffy rice with fresh vegetables and a creamy garlic sauce. A perfect Mediterranean-inspired bowl.

Ingredients

  • 1 lb chicken breast, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked white rice
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 tablespoon fresh dill, chopped
  • 1 clove garlic, minced (for sauce)
  • Salt and pepper to taste (for sauce)

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, 3 cloves minced garlic, oregano, salt, and pepper. Add chicken cubes and toss to coat. Marinate for at least 30 minutes.
  2. Preheat grill or grill pan over medium-high heat. Thread chicken onto skewers (if using wooden, soak in water first). Grill for 10-12 minutes, turning occasionally, until cooked through and slightly charred.
  3. While chicken cooks, prepare garlic sauce: In a small bowl, mix Greek yogurt, mayonnaise, fresh dill, 1 clove minced garlic, salt, and pepper. Refrigerate until ready to serve.
  4. To assemble bowls, divide cooked rice among four bowls. Top with grilled chicken, cucumber, cherry tomatoes, and red onion. Drizzle with garlic sauce.

Notes

You can customize the seasonings to taste. Add feta cheese or olives for extra flavor.
