Description

A light and flavorful bowl featuring marinated grilled chicken, fresh veggies, and a creamy garlic sauce over fluffy rice or pita.


Ingredients

  • 1 1/2 lbs boneless skinless chicken breasts (cut into 1-inch cubes)
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 3 cloves garlic (minced)
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup plain Greek yogurt
  • 2 tbsp mayonnaise
  • 2 tbsp fresh lemon juice (for sauce)
  • 2 cloves garlic (minced for sauce)
  • 1/2 tsp salt (for sauce)
  • 2 cups cooked rice or 4 pita breads
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1/2 red onion (thinly sliced)
  • 1/2 cup Kalamata olives (optional)


Instructions

  1. In a bowl, whisk together 3 tbsp olive oil, 2 tbsp lemon juice, 3 minced garlic cloves, oregano, 1/2 tsp salt, and pepper. Add chicken cubes, toss to coat, cover, and refrigerate for at least 30 minutes.
  2. For the garlic sauce, combine Greek yogurt, mayonnaise, 2 tbsp lemon juice, 2 minced garlic cloves, and 1/2 tsp salt. Stir until smooth, then refrigerate until ready to serve.
  3. Preheat grill or grill pan to medium-high heat. Thread chicken onto skewers (or cook pieces directly). Grill for 10–12 minutes, turning occasionally, until browned and cooked through (internal temp 165°F).
  4. Remove chicken from skewers. Assemble bowls by placing rice or pita at the base, then topping with chicken, cherry tomatoes, cucumber, red onion, and olives if using.
  5. Drizzle with prepared garlic sauce and serve immediately.

Notes

You can customize the seasonings to taste. For a dairy-free option, use a plant-based yogurt substitute.
