Description
Tender marinated chicken souvlaki served over fluffy rice with fresh veggies and a creamy garlic sauce. This bowl is a complete meal bursting with Greek flavors.
Ingredients
- 1.5 lbs boneless skinless chicken thighs, cut into 1-inch pieces
- 3 tbsp olive oil
- 3 tbsp lemon juice
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/2 cup plain Greek yogurt
- 2 tbsp mayonnaise
- 2 cloves garlic, finely minced (for sauce)
- 1 tbsp lemon juice (for sauce)
- 1/2 tsp salt (for sauce)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup crumbled feta cheese
- Fresh parsley for garnish
Instructions
- In a bowl, combine olive oil, 3 tbsp lemon juice, 4 minced garlic cloves, oregano, thyme, salt, and pepper. Add chicken pieces and toss to coat. Cover and marinate in refrigerator for at least 30 minutes.
- While chicken marinates, rinse rice under cold water. In a saucepan, bring broth to a boil, add rice, reduce heat to low, cover, and cook for 18 minutes. Remove from heat and let stand covered for 5 minutes, then fluff with a fork.
- In a small bowl, mix Greek yogurt, mayonnaise, 2 finely minced garlic cloves, 1 tbsp lemon juice, and 1/2 tsp salt. Stir until smooth. Set aside.
- Thread marinated chicken onto wooden or metal skewers (if using wooden, soak in water for 30 minutes first).
- Grill skewers over medium-high heat or broil in the oven for about 10-12 minutes, turning occasionally, until chicken is cooked through and lightly charred. Remove from skewers.
- To assemble bowls, divide rice among 4 bowls. Top with grilled chicken, cherry tomatoes, cucumber, red onion, and feta cheese. Drizzle generously with garlic sauce and garnish with fresh parsley.
Notes
You can customize the seasonings to taste. For a gluten-free option, serve over quinoa or cauliflower rice. The garlic sauce can be made a day ahead and refrigerated.
