Description
Tender marinated chicken skewers served over fluffy rice with fresh veggies and a creamy garlic sauce. A vibrant and healthy meal inspired by Greek street food.
Ingredients
- 1 lb boneless skinless chicken breasts, cut into 1-inch cubes
- 3 tbsp olive oil
- 3 tbsp lemon juice
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/2 cup Kalamata olives
- 3 cups cooked rice (white or brown)
- For the Garlic Sauce: 1/2 cup Greek yogurt
- 2 tbsp mayonnaise
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1/4 tsp salt
- 1 tbsp chopped fresh dill or parsley
Instructions
- In a bowl, whisk olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken cubes, toss to coat, and marinate for at least 15 minutes (or up to 2 hours in the fridge).
- While chicken marinates, prepare garlic sauce: mix Greek yogurt, mayonnaise, garlic, lemon juice, salt, and dill/parsley in a small bowl. Refrigerate until ready to serve.
- Thread chicken onto skewers (if using wooden skewers, soak in water for 20 minutes first).
- Grill or pan-sear skewers over medium-high heat for 4-5 minutes per side, until cooked through and slightly charred. Remove chicken from skewers.
- Assemble bowls: divide cooked rice among 4 bowls. Top with chicken, cherry tomatoes, cucumber, red onion, and olives.
- Drizzle garlic sauce over each bowl. Serve warm.
Notes
You can customize the seasonings to taste. For extra freshness, add crumbled feta cheese or a squeeze of lemon before serving. If using wooden skewers, soak them for 20 minutes to prevent burning.
