Juicy, herb-infused chicken meatballs served with a cool and creamy homemade tzatziki sauce. Perfect for a light yet satisfying main course or appetizer.
Ingredients
- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped fresh parsley
- 1/4 cup grated red onion, squeezed dry
- 2 cloves garlic, minced
- 1 large egg, lightly beaten
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 cup plain Greek yogurt
- 1/2 cucumber, seeded and grated
- 1 tbsp fresh lemon juice
- 1 tbsp chopped fresh dill
- 1 small clove garlic, minced (for tzatziki)
- Salt and pepper to taste (for tzatziki)
Instructions
- Prepare the tzatziki: In a bowl, combine Greek yogurt, grated cucumber (squeezed dry), lemon juice, dill, and garlic. Season with salt and pepper. Refrigerate until serving.
- Make the meatballs: In a large bowl, mix ground chicken, breadcrumbs, parsley, onion, garlic, egg, oregano, salt, and pepper until just combined.
- Shape the mixture into 20-24 small meatballs.
- Heat olive oil in a large skillet over medium heat. Add meatballs and cook, turning occasionally, until golden brown and cooked through (about 10-12 minutes).
- Serve the meatballs warm with the homemade tzatziki sauce.
Notes
You can customize the seasonings to taste. For a gluten-free version, use gluten-free breadcrumbs. Leftover meatballs are great in pita bread with lettuce and tomato.
