Description
Juicy beef meatballs seasoned with Mediterranean herbs, served with a rich and tangy tzatziki blended with sun-dried tomatoes. Perfect as an appetizer or main course.
Ingredients
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1 large egg
- 1 tsp dried oregano
- 1 tsp dried mint
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 cup Greek yogurt
- 1/2 cup finely chopped sun-dried tomatoes (packed in oil, drained)
- 1/2 English cucumber, grated and squeezed dry
- 2 tbsp fresh dill, chopped
- 1 tbsp fresh lemon juice
- 1 tbsp olive oil (for tzatziki)
- Salt and pepper to taste
Instructions
- In a large bowl, combine ground beef, breadcrumbs, red onion, garlic, egg, oregano, mint, cumin, salt, and black pepper. Mix gently until just combined.
- Shape the mixture into 16-20 meatballs, about 1.5 inches in diameter.
- Heat olive oil in a large skillet over medium-high heat. Add meatballs in batches, browning on all sides, about 8-10 minutes total. Remove and set aside.
- In a separate bowl, combine Greek yogurt, chopped sun-dried tomatoes, grated cucumber, dill, lemon juice, and olive oil. Stir until well mixed. Season with salt and pepper to taste.
- Serve meatballs with the creamy sun-dried tomato tzatziki on the side or drizzled over the top.
Notes
You can customize the seasonings to taste. For a lighter version, use ground turkey or chicken. The tzatziki can be made ahead and refrigerated for up to 2 days.
