Description

Juicy beef meatballs seasoned with Mediterranean herbs, served with a rich and tangy tzatziki blended with sun-dried tomatoes. Perfect as an appetizer or main course.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tsp dried oregano
  • 1 tsp dried mint
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup Greek yogurt
  • 1/2 cup finely chopped sun-dried tomatoes (packed in oil, drained)
  • 1/2 English cucumber, grated and squeezed dry
  • 2 tbsp fresh dill, chopped
  • 1 tbsp fresh lemon juice
  • 1 tbsp olive oil (for tzatziki)
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, red onion, garlic, egg, oregano, mint, cumin, salt, and black pepper. Mix gently until just combined.
  2. Shape the mixture into 16-20 meatballs, about 1.5 inches in diameter.
  3. Heat olive oil in a large skillet over medium-high heat. Add meatballs in batches, browning on all sides, about 8-10 minutes total. Remove and set aside.
  4. In a separate bowl, combine Greek yogurt, chopped sun-dried tomatoes, grated cucumber, dill, lemon juice, and olive oil. Stir until well mixed. Season with salt and pepper to taste.
  5. Serve meatballs with the creamy sun-dried tomato tzatziki on the side or drizzled over the top.

Notes

You can customize the seasonings to taste. For a lighter version, use ground turkey or chicken. The tzatziki can be made ahead and refrigerated for up to 2 days.
