Description
Juicy, herb-infused beef meatballs with a Mediterranean twist, served with a rich and creamy tzatziki sauce featuring sun-dried tomatoes. Perfect for a weeknight dinner or a festive appetizer.
Ingredients
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1 large egg
- 1 teaspoon dried oregano
- 1 teaspoon dried mint
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- For the tzatziki: 1 cup Greek yogurt
- 1/2 cup finely chopped sun-dried tomatoes (packed in oil, drained)
- 1/2 cucumber, seeded and grated, squeezed dry
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh dill
- Salt and pepper to taste
Instructions
- In a large bowl, combine ground beef, breadcrumbs, red onion, garlic, egg, oregano, mint, cumin, salt, and pepper. Mix until just combined, then form into 1.5-inch meatballs.
- Heat olive oil in a large skillet over medium heat. Add meatballs in a single layer, working in batches if needed. Cook for 6-7 minutes per side, turning occasionally, until browned all over and cooked through (internal temperature reaches 160°F). Transfer to a plate and rest.
- In a separate bowl, mix together Greek yogurt, sun-dried tomatoes, grated cucumber, garlic, lemon juice, and dill. Season with salt and pepper to taste.
- Serve the meatballs warm with a generous dollop of the sun-dried tomato tzatziki.
Notes
You can customize the seasonings to taste. For a lighter version, use ground turkey or chicken. If you prefer a spicier kick, add a pinch of red pepper flakes to the meatball mixture.
