Description
Vibrant roasted sweet potato skewers drizzled with a sticky cranberry maple glaze, topped with crumbled feta and toasted walnuts for a perfect balance of sweet and savory. Ideal as a side or appetizer.
Ingredients
- 2 large sweet potatoes, peeled and cut into 1-inch cubes
- 3 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup dried cranberries
- 1/4 cup maple syrup
- 1 tablespoon apple cider vinegar
- 1/2 cup crumbled feta cheese
- 1/3 cup chopped walnuts, toasted
- Fresh parsley for garnish
- 8 wooden or metal skewers (if wooden, soak in water 30 minutes)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss sweet potato cubes with olive oil, smoked paprika, salt, and black pepper until well coated.
- Thread sweet potato cubes onto skewers, leaving a little space between pieces. Place skewers on prepared baking sheet.
- Roast for 25-30 minutes, turning halfway through, until sweet potatoes are tender and golden brown.
- Meanwhile, in a small saucepan over medium heat, combine dried cranberries, maple syrup, and apple cider vinegar. Bring to a simmer and cook for 3-4 minutes until slightly thickened and cranberries soften. Remove from heat.
- Remove skewers from oven and let cool slightly. Drizzle the sticky cranberry maple glaze over the skewers.
- Sprinkle crumbled feta cheese and toasted walnuts over the top. Garnish with fresh parsley and serve warm.
Notes
You can customize the seasonings to taste. For extra heat, add a pinch of cayenne pepper to the sweet potato seasoning. If using wooden skewers, soaking prevents burning.
