Description

Vibrant roasted sweet potato skewers drizzled with a sticky cranberry maple glaze, topped with crumbled feta and toasted walnuts for a perfect balance of sweet and savory. Ideal as a side or appetizer.


Ingredients

  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup dried cranberries
  • 1/4 cup maple syrup
  • 1 tablespoon apple cider vinegar
  • 1/2 cup crumbled feta cheese
  • 1/3 cup chopped walnuts, toasted
  • Fresh parsley for garnish
  • 8 wooden or metal skewers (if wooden, soak in water 30 minutes)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss sweet potato cubes with olive oil, smoked paprika, salt, and black pepper until well coated.
  3. Thread sweet potato cubes onto skewers, leaving a little space between pieces. Place skewers on prepared baking sheet.
  4. Roast for 25-30 minutes, turning halfway through, until sweet potatoes are tender and golden brown.
  5. Meanwhile, in a small saucepan over medium heat, combine dried cranberries, maple syrup, and apple cider vinegar. Bring to a simmer and cook for 3-4 minutes until slightly thickened and cranberries soften. Remove from heat.
  6. Remove skewers from oven and let cool slightly. Drizzle the sticky cranberry maple glaze over the skewers.
  7. Sprinkle crumbled feta cheese and toasted walnuts over the top. Garnish with fresh parsley and serve warm.

Notes

You can customize the seasonings to taste. For extra heat, add a pinch of cayenne pepper to the sweet potato seasoning. If using wooden skewers, soaking prevents burning.
