A delightful appetizer featuring roasted sweet potato rounds topped with creamy goat cheese, sweet fig jam, and crunchy toasted pecans.
Ingredients
- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika
- 4 ounces goat cheese, softened
- 1/3 cup fig jam
- 1/2 cup pecans, toasted and chopped
- Fresh thyme leaves for garnish
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, salt, pepper, and smoked paprika. Arrange in a single layer on the baking sheet. Roast for 20-25 minutes, flipping halfway, until golden and tender.
- Let sweet potato rounds cool slightly. Top each round with a small dollop of goat cheese, a teaspoon of fig jam, and a sprinkle of toasted pecans.
- Garnish with fresh thyme leaves and serve warm.
