Description

Crispy golden rolls made from grated sweet potato and zucchini, filled with a savory mix of spinach, feta, and sun-dried tomatoes. Perfect as a vegetarian main or a stunning side dish.

Ingredients

  • 2 cups grated sweet potato (about 1 large)
  • 2 cups grated zucchini (about 2 medium), squeezed dry
  • 1 teaspoon salt
  • 2 large eggs, beaten
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil, for frying
  • For the filling:
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 5 cups fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the filling: Heat olive oil in a skillet over medium heat. Add garlic and cook for 30 seconds. Add spinach and cook until wilted, about 2 minutes. Remove from heat and stir in feta, sun-dried tomatoes, salt, and pepper. Set aside.
  2. Make the rosti mixture: In a large bowl, combine grated sweet potato, zucchini, salt, eggs, flour, Parmesan, and black pepper. Mix well.
  3. Assemble the rolls: Lay a large piece of plastic wrap on a flat surface. Spread half of the rosti mixture into a rectangle about 1/4 inch thick. Spread half of the filling over the mixture, leaving a 1-inch border. Using the plastic wrap, roll up the mixture tightly like a jelly roll. Repeat with remaining mixture and filling. Chill in the refrigerator for 15 minutes to firm up.
  4. Cook the rolls: Heat olive oil in a large non-stick skillet over medium heat. Carefully transfer the rolls to the skillet and cook for 5-7 minutes on each side, until golden brown and cooked through. You may need to cook in batches.
  5. Serve: Cut the rolls into slices and serve hot.

Notes

You can customize the seasonings to taste. For a vegan version, omit the feta and use a dairy-free alternative. These rolls can also be baked at 400°F (200°C) for 20-25 minutes, flipping halfway, for a lower-fat option.
