Crispy phyllo rolls filled with creamy feta and tangy cranberries, baked to golden perfection and drizzled with a sweet cranberry honey syrup.
Ingredients
- 8 oz feta cheese, crumbled
- 1/4 cup dried cranberries, chopped
- 2 tbsp honey
- 1 tsp lemon zest
- 1/4 tsp black pepper
- 12 sheets phyllo dough, thawed
- 1/2 cup unsalted butter, melted
- 1/4 cup honey
- 2 tbsp cranberry juice
- 1 tbsp dried cranberries, finely chopped (for syrup)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a bowl, mix feta, chopped cranberries, 2 tbsp honey, lemon zest, and black pepper.
- Lay one phyllo sheet on a clean surface and brush with melted butter. Top with another sheet and brush with butter. Repeat to make a stack of 3 sheets.
- Cut the stacked phyllo into 4 equal strips (about 3 inches wide). Place a heaping tablespoon of feta mixture at the end of each strip. Fold the sides over and roll up tightly. Brush with butter and place on prepared baking sheet. Repeat with remaining phyllo and filling.
- Bake for 20-25 minutes, until golden and crispy.
- While rolls bake, make syrup: In a small saucepan, combine 1/4 cup honey, cranberry juice, and finely chopped cranberries. Heat over low heat, stirring, until warm and slightly thickened.
- Drizzle syrup over warm rolls and serve.
