Description
Crispy, golden phyllo rolls filled with creamy feta cheese, baked to perfection and drizzled with a sweet and tart cranberry honey sauce. A delightful appetizer or snack that balances savory and sweet flavors.
Ingredients
- 8 sheets phyllo dough, thawed
- 1/2 cup (4 oz) feta cheese, crumbled
- 2 tablespoons cream cheese, softened
- 1 tablespoon fresh dill, chopped
- 1/4 teaspoon black pepper
- 1/4 cup unsalted butter, melted
- 1/2 cup fresh or frozen cranberries
- 1/4 cup honey
- 2 tablespoons water
- 1 tablespoon lemon juice
- Pinch of salt
- Optional: fresh thyme for garnish
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a small bowl, combine crumbled feta, cream cheese, dill, and black pepper. Mix until well blended.
- Place one sheet of phyllo dough on a clean work surface (keep remaining sheets covered with a damp cloth). Brush lightly with melted butter. Layer another sheet on top and brush with butter. Repeat until you have 4 layers.
- Cut the layered phyllo into 4 equal rectangles (about 4×5 inches each). Place a spoonful of the feta mixture along one short end of each rectangle.
- Fold the sides inward, then roll up tightly from the filling end. Place seam-side down on the prepared baking sheet. Brush tops with remaining butter. Repeat with remaining phyllo and filling to make 8 rolls total.
- Bake for 18-22 minutes, or until golden brown and crispy.
- While rolls bake, make the cranberry honey: In a small saucepan, combine cranberries, honey, water, lemon juice, and salt. Bring to a simmer over medium heat. Cook for 5-7 minutes, stirring occasionally, until cranberries burst and sauce thickens slightly. Remove from heat and let cool slightly.
- Drizzle the baked feta rolls with the cranberry honey sauce. Garnish with fresh thyme if desired. Serve warm.
Notes
You can customize the seasonings to taste. For a spicier version, add a pinch of red pepper flakes to the feta mixture. If using frozen cranberries, do not thaw before cooking.
