Description

Crispy, golden phyllo rolls filled with creamy feta cheese, baked to perfection and drizzled with a sweet and tart cranberry honey sauce. A delightful appetizer or snack that balances savory and sweet flavors.


Ingredients

  • 8 sheets phyllo dough, thawed
  • 1/2 cup (4 oz) feta cheese, crumbled
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon fresh dill, chopped
  • 1/4 teaspoon black pepper
  • 1/4 cup unsalted butter, melted
  • 1/2 cup fresh or frozen cranberries
  • 1/4 cup honey
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • Pinch of salt
  • Optional: fresh thyme for garnish


Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a small bowl, combine crumbled feta, cream cheese, dill, and black pepper. Mix until well blended.
  3. Place one sheet of phyllo dough on a clean work surface (keep remaining sheets covered with a damp cloth). Brush lightly with melted butter. Layer another sheet on top and brush with butter. Repeat until you have 4 layers.
  4. Cut the layered phyllo into 4 equal rectangles (about 4×5 inches each). Place a spoonful of the feta mixture along one short end of each rectangle.
  5. Fold the sides inward, then roll up tightly from the filling end. Place seam-side down on the prepared baking sheet. Brush tops with remaining butter. Repeat with remaining phyllo and filling to make 8 rolls total.
  6. Bake for 18-22 minutes, or until golden brown and crispy.
  7. While rolls bake, make the cranberry honey: In a small saucepan, combine cranberries, honey, water, lemon juice, and salt. Bring to a simmer over medium heat. Cook for 5-7 minutes, stirring occasionally, until cranberries burst and sauce thickens slightly. Remove from heat and let cool slightly.
  8. Drizzle the baked feta rolls with the cranberry honey sauce. Garnish with fresh thyme if desired. Serve warm.

Notes

You can customize the seasonings to taste. For a spicier version, add a pinch of red pepper flakes to the feta mixture. If using frozen cranberries, do not thaw before cooking.
