Description

A warm and savory appetizer featuring a wheel of Brie cheese baked until golden, topped with caramelized apples and fresh thyme. Perfect for holiday gatherings or cozy dinners.


Ingredients

  • 1 (8-ounce) wheel Brie cheese
  • 2 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon fresh thyme leaves, plus sprigs for garnish
  • 1 sheet frozen puff pastry, thawed
  • 1 large egg, beaten (for egg wash)
  • Salt and freshly ground black pepper, to taste
  • Crusty bread or crackers for serving


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium skillet over medium heat, melt butter. Add the apple slices and cook until softened, about 5 minutes. Stir in brown sugar, apple cider vinegar, and 1 tablespoon of thyme leaves. Cook until apples are caramelized and liquid has reduced, about 2 minutes more. Season with a pinch of salt and pepper. Set aside.
  3. On a lightly floured surface, roll out the puff pastry sheet to a 12-inch square. Place the Brie wheel in the center of the pastry. Spoon the caramelized apple mixture over the top of the Brie.
  4. Fold the puff pastry over the Brie, pleating and pressing to seal completely. Trim any excess pastry if needed. Flip the wrapped Brie seam-side down onto the prepared baking sheet.
  5. Brush the pastry with beaten egg wash. Sprinkle with a few more fresh thyme leaves and a pinch of black pepper.
  6. Bake until the pastry is puffed and golden brown, 20 to 25 minutes. Let rest for 5 minutes before serving. Garnish with additional thyme sprigs and serve warm with crusty bread or crackers.

Notes

You can customize the seasonings to taste. For a sweeter version, add a pinch of cinnamon or nutmeg to the apples. Ensure Brie is well chilled before wrapping for easier handling.
