A warm and savory appetizer featuring a wheel of Brie cheese baked until golden, topped with caramelized apples and fresh thyme. Perfect for holiday gatherings or cozy dinners.
Ingredients
- 1 (8-ounce) wheel Brie cheese
- 2 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
- 2 tablespoons unsalted butter
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
- 1 tablespoon fresh thyme leaves, plus sprigs for garnish
- 1 sheet frozen puff pastry, thawed
- 1 large egg, beaten (for egg wash)
- Salt and freshly ground black pepper, to taste
- Crusty bread or crackers for serving
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a medium skillet over medium heat, melt butter. Add the apple slices and cook until softened, about 5 minutes. Stir in brown sugar, apple cider vinegar, and 1 tablespoon of thyme leaves. Cook until apples are caramelized and liquid has reduced, about 2 minutes more. Season with a pinch of salt and pepper. Set aside.
- On a lightly floured surface, roll out the puff pastry sheet to a 12-inch square. Place the Brie wheel in the center of the pastry. Spoon the caramelized apple mixture over the top of the Brie.
- Fold the puff pastry over the Brie, pleating and pressing to seal completely. Trim any excess pastry if needed. Flip the wrapped Brie seam-side down onto the prepared baking sheet.
- Brush the pastry with beaten egg wash. Sprinkle with a few more fresh thyme leaves and a pinch of black pepper.
- Bake until the pastry is puffed and golden brown, 20 to 25 minutes. Let rest for 5 minutes before serving. Garnish with additional thyme sprigs and serve warm with crusty bread or crackers.
Notes
You can customize the seasonings to taste. For a sweeter version, add a pinch of cinnamon or nutmeg to the apples. Ensure Brie is well chilled before wrapping for easier handling.
