Description

A warm and gooey wheel of brie cheese baked until golden, topped with sweet caramelized apples and fresh thyme. Perfect as an appetizer for any gathering.

Ingredients

  • 1 (8 ounce) wheel of brie cheese
  • 2 tablespoons unsalted butter
  • 2 medium apples, thinly sliced
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon cinnamon
  • 1 tablespoon fresh thyme leaves, plus more for garnish
  • 1 sheet puff pastry (thawed)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a skillet over medium heat, melt butter. Add apples, brown sugar, vinegar, and cinnamon. Cook until apples are tender and caramelized, about 8-10 minutes. Stir in fresh thyme and remove from heat.
  3. Roll out the puff pastry on a lightly floured surface. Place the brie wheel in the center and top with the caramelized apple mixture.
  4. Fold the pastry over the brie, sealing the edges. Brush the top with the beaten egg.
  5. Place the wrapped brie on the prepared baking sheet. Bake for 20-25 minutes, until golden brown and puffed.
  6. Let rest for 5 minutes before serving. Garnish with extra thyme leaves and serve warm with crackers or sliced baguette.
