Description

A luxurious yet simple appetizer featuring a whole wheel of brie baked until molten, topped with sweet caramelized apples and fresh thyme. Perfect for gatherings or cozy nights in.


Ingredients

  • 1 (8 ounce) wheel brie cheese
  • 1 sheet puff pastry, thawed
  • 2 tablespoons unsalted butter
  • 2 apples (such as Honeycrisp), peeled, cored, and sliced thin
  • 2 tablespoons brown sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon fresh thyme leaves, plus extra for garnish
  • 1 egg, beaten (for egg wash)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a skillet over medium heat, melt butter. Add apple slices, brown sugar, and lemon juice. Cook, stirring occasionally, until apples are soft and caramelized, about 8-10 minutes. Remove from heat and stir in thyme leaves.
  3. Place the brie wheel in the center of the puff pastry sheet. Top with the caramelized apple mixture, spreading evenly.
  4. Fold the pastry over the brie, pleating and pinching to seal completely. Brush the pastry with beaten egg.
  5. Place the wrapped brie seam-side down on the prepared baking sheet. Bake for 25-30 minutes or until golden brown and puffed. Let rest for 5 minutes before serving.
  6. Garnish with additional fresh thyme leaves and serve warm with crackers or bread.

Notes

You can customize the seasonings to taste. For a nutty twist, add chopped walnuts to the apple mixture. Serve immediately for the best melted texture.
