Ingredients

  • 8 oz spaghetti
  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp Cajun seasoning
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Cook spaghetti according to package directions until al dente. Drain and set aside.
  2. Season chicken pieces with 1/2 tbsp Cajun seasoning, salt, and pepper.
  3. In a large skillet, heat olive oil over medium-high heat. Cook chicken until golden and cooked through, about 5-7 minutes. Remove chicken and set aside.
  4. In the same skillet, reduce heat to medium. Add minced garlic and sauté for 30 seconds until fragrant.
  5. Pour in heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
  6. Stir in remaining Cajun seasoning, cayenne pepper, paprika, and salt/pepper.
  7. Gradually whisk in Parmesan cheese until the sauce is smooth and thickened.
  8. Return chicken to the skillet, then add cooked spaghetti. Toss well to coat everything in the sauce.
  9. Serve hot, garnished with fresh parsley.

Notes

You can customize the seasonings to taste. For extra heat, add more cayenne or sliced jalapeños. For a lighter version, use half-and-half instead of heavy cream.
