Description

A flavorful and satisfying dish featuring spicy Cajun-seasoned chicken breasts served over a bed of creamy, cheesy mozzarella linguine. Perfect for a weeknight dinner with a kick.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 12 ounces linguine pasta
  • 2 tablespoons butter
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Season the chicken breasts generously with Cajun seasoning on both sides.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 6-7 minutes per side, until cooked through and nicely browned. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant. Add butter and let it melt.
  4. Pour in the heavy cream and bring to a simmer. Reduce heat to low and stir in mozzarella and Parmesan cheeses until melted and smooth. Season with salt and pepper.
  5. Meanwhile, cook linguine according to package instructions. Drain, reserving 1/2 cup of pasta water.
  6. Add the cooked linguine to the skillet with the cheese sauce, tossing to coat. If sauce is too thick, add a little pasta water to reach desired consistency.
  7. Slice the cooked chicken and serve over the cheesy linguine. Garnish with fresh parsley.
