Description
A flavorful and satisfying dish featuring spicy Cajun-seasoned chicken breasts served over a bed of creamy, cheesy mozzarella linguine. Perfect for a weeknight dinner with a kick.
Ingredients
- 2 boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 12 ounces linguine pasta
- 2 tablespoons butter
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts generously with Cajun seasoning on both sides.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 6-7 minutes per side, until cooked through and nicely browned. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds until fragrant. Add butter and let it melt.
- Pour in the heavy cream and bring to a simmer. Reduce heat to low and stir in mozzarella and Parmesan cheeses until melted and smooth. Season with salt and pepper.
- Meanwhile, cook linguine according to package instructions. Drain, reserving 1/2 cup of pasta water.
- Add the cooked linguine to the skillet with the cheese sauce, tossing to coat. If sauce is too thick, add a little pasta water to reach desired consistency.
- Slice the cooked chicken and serve over the cheesy linguine. Garnish with fresh parsley.
